Clean Eating Peanut Butter Granola

One of my favorite things to snack on is granola. I didn't have the ingredients for my normal granola so I had to quickly come up with a new one. This is a super easy recipe, I am sure most of you will already have the ingredients on hand! I actually made this today because if I hadn't I was going to start snacking on super unhealthy (Doritos) food. I did not want to do that! I am ashamed to admit that I have gained 3 pounds. I have got to get it back under control. I have lost over 60 pounds (you can read about my journey here) and I absolutely did not want to be sucked back into bad habits. I worked so hard to lose that weight!

Clean Eating Peanut Butter Granola

Ingredients

5 cups old fashioned oats
3/4 cups organic peanut butter
3/4 cups raw honey (or pure maple syrup)
1/4 cup coconut sugar

Pre-heat oven to 280
1. Add oats to a large bowl. Add peanut butter, honey and cocnut sugar to a microwave safe bowl. heat in the microwave for 30 seconds. Stir together until creamy.

2. Pour peanut butter mix into the oats bowls. Stir together until oats are covered in peanut butter mixture.

3. Line a cookie sheet with wax paper and pour oats on to the cookie sheet. Flatten into a single layer. Cook in the oven 25-30 mins. Every 10 mins I would check and give the oats a stir. Cook until golden brown.
