Sweet Potato hash with Poached Egg

One of my favorite things to eat on my diet are sweet potatoes. They are better for you than regular potatoes and taste amazing.  I got the idea of sweet potato hash from Bon Appetit blog. I changed it up and made it my own. My husband and I were surprised how good it was. He has asked me to make it again for this week. I served it for dinner but it could really be eaten at any time of the day.

Sweet Potato Hash and Poached Egg


1 large sweet potato, pealed and cubed into small pieces
1/2 pound ground sausage
1/4 cup onion, diced
1/2 green pepper, diced
garlic powder
salt and pepper
red hot pepper flakes
Frank's hot sauce
2 large eggs, poached


1. Over medium heat add oil to a pan and saute sweet potatoes.  While they are sauteing, cook your sausage in a separate pan. Once the sausage is no longer pink remove from heat and drain.

2. Once the potatoes start to become tender add onions, peppers, garlic powder and salt and pepper. The potatoes will be done when you can easily stick a fork through them . Add the sausage and heat for a couple of minutes. While that is cooking poach your eggs.

3.Once everything is done place the egg on top of the hash,  drizzle with hot sauce and sprinkle with red pepper flakes. Serve immediately.
