Valentine's Day~Bacon Wrapped Chicken Bites

For Valentine's Day this year I made my husband a meal I knew he would love. I wanted him to have a really nice dinner because he was coming back from the field that day. He was due to be back around 6pm so I had everything made and set out on the table by 5:45. I should have known better than to do that. This is the Army. Nothing ever goes as planned! Needless to say he didn't walk through the door until 9pm. I felt really bad but I ate before he got home. I was starving! I mean I am pregnant! Even though he was late and had to eat by himself he absolutely loved the meal I made him! I mean come on, anything wrapped in bacon is amazing!

Bacon Wrapped Chicken with a Brown Sugar Rub
1lb chicken breasts
1 package sliced maple bacon
2/3 cup brown sugar
1 tbsp. chipotle chili powder
Pre heat oven 350
Cut chicken breasts into 1 inch cubes. Cut bacon into 3 slices. I found using a pair of kitchen scissors was easiest to cut the bacon slice into 3 strips. Wrap each piece of chicken with a strip of bacon. Mix together brown sugar and chipotle chili powder. Roll each piece of bacon wrapped chicken in the brown sugar mix. Spray a large baking pan with cooking spray. Place chicken on the pan. Sprinkle with some of the remaining brown sugar mix. Cook at 350 for 30-35 mins.
I served this with a side of corn on the cob and zucchini squares.
