Right now your probably wondering how the heck these yummy, gooey, cheesy potatoes can be healthy...well there's not butter, skim instead of whole milk, low fat shredded cheese and turkey bacon instead of actual bacon. those ingredients alone will cute back on the calories. I sorta, kinda, followed this recipe here Prevention.com but I didn't have a lot of these ingredients so I pretty much made it up as I went. It was a huge hit with my hubby! He asked me to make them again soon.
~ medium russet potatoes
~ 1 tbsp flour
~ salt and pepper to season
~ 1 2/3 cup skim milk
~ 1 cup low fat shredded cheddar cheese (all I had was sharp white that I shredded it myself)
~ 10 oz bag of frozen chopped broccoli (thawed)
~ 5 strips turkey bacon, crumbled (we are bacon lovers so I added extra)
~ 1/2 cup chopped onion (sauteed)
Pre heat 425
1. Wash and poke holes in your potatoes. Wrap in tin foil and cook in oven for 1 hour ( my husband had the grill going so we actually grilled the potatoes which did not take as much time).
2. In a sauce pan add flour, salt and pepper and gradually whisk in 1 cup milk. Stirring for about 5 mins or until sauce thickens. Remove from heat and stir in cheese until smooth. Set aside.
3. Once potatoes are done cut length wise (only the tops!) and be careful they are hot! Hold them with an oven mit. Scoop out potato insides into a bowl. Pour remaining milk and mash potatoes. I also mixed in the onion here.
4. Spoon mashed potato back into skins. Mix broccoli and bacon into the cheese sauce and spoon on to the tops of the potatoes. Bake for another 10 mins or until heated.
I promise no one will be able to tell these are a healthy version! Try them out on your family or guest, they will love it!
