Whole Wheat Cinnamon Waffles

I haven't posted since last Thursday! We have been pretty busy trying to get ready for our big move. Only 18 more days! I have a little anxiety that we won't get everything ready in time but we will, we have no choice but to. I went through some of my sons toys yesterday and got rid of a bunch. He still has way too many but it was a start. It was also difficult because whenever I would put a toy in the bag to get rid of he would take them out and put them back in his toy box (even though he never plays with those toys). Next time I go through them I will make sure he is asleep.

Last night I decided to make breakfast for dinner! I love doing that, don't you? It's easy and delicious! I am still on my diet so I decided to make whole wheat waffles because they are a little better for you. I also used light syrup because it has less calories.



~ 1 1/2 cups whole wheat flour
~ 2 tsp baking powder
~ 1/2 tsp salt
~ 2 tbsp sugar
~ 1/2 tbsp cinnamon
~ 1 tsp vanilla
~1 large egg
~ 1 1/2 cups milk (I used skim)
~ 1/3 cup vegetable oil

1. Whisk together egg, milk, oil and vanilla. In a separate bowl whisk together flour, baking powder, sugar, and cinnamon. Gradually add dry ingredients to wet ingredients. Mix well.

2. Cook the waffles as instructed on your waffle iron. Makes 8 waffles.

He looks a little silly with his eyes no all the way opened but he loved them and he is a very picky eater!
