This pizza came out amazing. I found the recipe on foodnetwork.com but I didn’t have all of their ingredients and ended up making my ow. However, the only thing I wasn’t crazy about was the cucumbers on it I think I will use pineapple next time instead.
~ 1 pizza dough any kind (I used whole wheat)
~1/2 cup duck sauce
~ 1/2 tsp crushed red pepper flakes
~ 2 cups monterey jack cheese
~ 1 tbs vegetable oil
~ 2 tbs soy sauce
~ 1 rounded tbs peanut butter
~ 2 tsp hot sauce (I used Franks)
~ 2 chicken breasts
~ 1 small onion chopped
~ 2 tbs honey
~ 2 tbs rice wine vinegar
~ 1/4 of a cucumber cut into 1/2 in pieces
~ cilantro leaves, chopped
Pre heat oven to 425
1. Form dough into pizza crust on a pizza pan. Top with duck sauce like you would pizza sauce. Sprinkle top with cheese, onion and red pepper flakes. Bake 15-17 mins until crust has browned and cheese has melted.
2. In a medium bowl combine vegetable oil, soy sauce, hot sauce, and peanut butter. Heat for 10 second in microwave so the peanut butter will be easier to mix. Add the chicken to the bowl and coat both sides. Let sit for 10 mins. Heat a large pan over medium heat. Add chicken Cook chicken until done making sure to cook both sides. When no longer pink the chicken is done. Slice chicken into pieces.
3. While chicken cooks mix honey and vinegar in a small bowl. Add cucumber and coat evenly.
4. Top the cooked pizza with the chicken, cilantro and cucumbers. Optional, garnish with peanuts.
