Oven Baked Zucchini Chips

This recipe turned out really good. My husband doesn't really care for zucchini but he couldn't get enough of these! These are super easy to prepare and take hardly any time to cook. I adapted this recipe from www.wellsphere.com. I didn't have all the correct ingredients so I improvised a bit.


~ 1 cup of crushed crackers (you can use bread crumbs, I just didn't have any)
~ 1/2 cup Parmesan cheese
~ 1/2 tsp seasoning salt
~ 1/4 tsp garlic powder
~ 1/8 tsp pepper
~ 1/4 cup milk (I used skim)
~ 2 medium sized zucchinis (sliced)

Pre heat oven to 425

1. In a medium mix together crackers, Parmesan cheese, seasoning salt, garlic powder and pepper. In a small bowl add milk and dip zucchini slices in making sure to get both sides. Add zucchini slices into cracker mix and coat both sides of zucchini. 

2. Place zucchini on greased (cooking spray) cookie sheet. Bake at 425 for 30 mins or until crisp.

They look pretty good, don't they?
