Broccoli Cheddar Soup

We found out last week that Colin will be stationed in Korea. The last few days have been filled with appointments and a lot f paper work. On Thursday we submitted our no fee passports, on Friday Christian had a physical, I had a physical on Monday and today we had an appointment with the EFMP office and got all our shots to go to Korea. We still have a ton more to do!

After the last stressful few days I wanted something comforting to eat. Nothing is more comforting than a nice bowl of soup. I made mine in the crock pot. I wanted to be able to throw all the ingredients in and go about my day. It came out great!


~4 cups chicken broth
~2 cups milk (I used skim)
~2 10 oz bags frozen broccoli
~1 cup diced carrot
~1/2 cup diced onion
~1 tbsp butter
~1 garlic clove minced
~1/2 tsp nutmeg
~1/2 tsp black pepper
~1/2tsp kosher salt
~3 cups cheddar cheese

1. To crock pot add butter, onion and garlic. Top with milk and broth and spices. Stir together. Add carrot and broccoli and stir again.

2. Cook on low for 6-8 hours or on high for 3-5 hours. 

3. 20 mins before serving add to blender and blend until pureed. Add back to crock pot. Add in cheddar cheese and cook until melted.
