I have been wondering what to do with the big bag of potatoes that I had bought. I hate peeling potatoes and making potato salad takes a while. I wanted to make something quick, easy, healthy and yummy. I started surfing the web and found potato chip recipes. Potato chips aren't normally healthy for you because of all the oil you have to cook them in. Then I came across a recipe for baked potato chips. Much healthier to bake them in the oven than in all that oil. Once I found how I wanted to cook them I needed to figure out what kind I wanted to make. I don't like plain potato chips they have to have a flavor to them for me to want to eat them. I decided to make BBQ Chips, I already had all the spices on hand so I wouldn't have to run to the store.
This probably wasn't the best recipe for me to make. I am really bad with knives. I always manage to cut my self. I however am proud to say that I did not cut my self this time! I was very careful. My husband will be really proud of me. Haha. Anyways, here is the recipe:
5 russet potatoes
4 tbs vegetable oil (or olive oil)
2 tsp paprika
1 1/4 tsp sugar
1 tsp garlic salt
1 tsp chili powder
1/2 tsp Lawry's seasoned salt
1 tsp onion powder
Pre-heat oven to 400
1. Scrub your potatoes really good. With the skin on using a sharp knife slice potatoes into thin slices. Careful not to cut yourself!
2. Place slices in a bowl full of water and let them soak for about 15 mins. This will take the extra starch off. Remove from water pat dry with paper towel.
3. Place slices into a new bowl and coat them with olive oil. Add all the spices and toss together. Place on baking sheet and cook in oven for 10-20mins. Remove them when they look crispy and chip like.
Enjoy!! They won't last long the are addicting!
