Bruschetta Recipe

My wonderful husband is the one who made this recipe. I can't take any credit for it. I didn't even eat it. I really do not like tomatoes so this wasn't something I would eat but my hubby said it was really good so I figured I'd share the recipe on here. It looks really good. So good that I even tried a couple bites. I wish I could say that I likes it but I just really dislike like tomatoes. This is a little off topic but before I go on to the recipe I had to share a story with you on what my son did. I checked my email the other day and saw an email from Amazon thanking me for my purchase. I was a little worried because I never placed an order and then I saw what the order was for. Curious George plastic face rings. A few days before I got that email I was searching for Curious George items to use for his Curious George themed birthday party and I guess that page was still up on Amazon. My son had been playing with my phone and ended up ordering them. Thankfully they were only for $3! The reason this story is so funny is because my son is only 2. He will be 3 in April. I guess he really wanted those!

Now back to the recipe!


 
Ingredients
 
5 Roma tomatoes (chopped)
2 tbsp. chopped onion (whatever kind you like best)
1 clove garlic (minced)
1/2 cup chopped fresh basil
1/2 tsp. lemon juice
salt and pepper to taste
1/3 plus 1/4 cups of olive oil (used in two different areas)
1 tbsp. Romano cheese
1 tbsp. Parmesan cheese
1 loaf of French bread
 
Set oven to broil
 
In a large bowl add tomatoes, garlic, onion, basil, lemon juice, salt and pepper, and 1/3 cup of olive oil.  Let chill in the fridge while you do the next step.
 
Slice bread into thin pieces. Use the remaining olive oil to brush on to the bread. Place slice on to a cookie sheet. Put in oven and broil until you see the bread starting to turn light brown. Take out of the oven.
 
Spoon the tomato mix onto the pieces of bread. Sprinkle with grated cheeses. Place back into the oven and cook until cheese is melted.
 
Looks pretty good doesn't it? I really wish I liked Bruschetta!

Gone with the Wind

 
Gone with the Wind is my absolute favorite book and movie EVER. I love everything about this movie. The romance, war, struggle, loss, drama and the dresses. I love the dresses. I'm pretty sure that I was born during the wrong time period. I would have loved to dress like that on a regular basis. My favorite dress is when she goes to the first ball where she learns that Melanie and Ashley are engaged. She is wearing a white dress with green flowers on it. I love it. I want it.

The reason I brought up Gone with the Wind is because my husband's unit is going to the field for a week and I am going to be hosting a Gone with the Wind night. No we will not be dressing up. Though that would be fun but I doubt you could find dresses like that here in Korea. We will just be watching Gone with the Wind and we will also watch Scarlet which is the sequel to Gone with the Wind but by a different author. Scarlet is also an excellent book and movie. I am going to miss my hubby a lot but I am really looking forward to Gone with the Wind night!
